SUMMARY

The Supervisor, Food Service assists in the planning, preparation and service of meals to patients, employees and visitors. Provides leadership, ensuring that that policies and procedures are carried out correctly. Oversees patient tray line, cafeteria, catering and has sole responsibility for food production and the department on weekends and in the evenings.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  1. Provides supervision of all staff in the department ensuring that all hospital and departmental policies are being followed. Counsels and documents any problems or disciplinary actions required when appropriate. Maintains documentation on staff attendance each payroll.  Ensures that employee schedules are posted timely ensuring schedules meet budgetary full-time employee (FTE) levels.
  2. Orients and trains all new employees within 30 days of hire. Prepares and administers the 90-day probationary evaluation and the annual employee evaluation. Completes competencies on staff as part of the 90-day evaluation and annual evaluation process.
  3. Inspects all areas of the kitchen and cafeteria to ensure that proper food handling procedures are being followed according to the Hazard Analysis and Critical Control Points (HACCP) principles. Inspects all areas of the department for adherence to sanitation standards. Inspects equipment routinely to ensure that it is operating safely. Reports malfunctions to the Maintenance department. Documents findings with corrective action taken on department checklist.
  4. Achieves a high accuracy level for all patient trays checked if functioning as the checker for tray line. Ensures all tray line stations are properly stocked and set up for the next meal. Ensures therapeutic diets are followed and that staff are following proper service techniques. Oversees the setup and operation of cafeteria service and catering services as needed.
  5. Completes all assigned paper work such as checklist, test trays, sanitation audits, cash reconciliation reports, and change back verification as required in this position accurately and timely. Demonstrates leadership skills and the ability to work effectively with peers, co-supervisors and managers as a member of the team and establishes collaborative and supportive relationships.
  1. Adheres to downtime procedures, established departmental policies, procedures, and objectives.

  1. Enhances professional growth and development by accessing educational programs, job related literature, in-service meetings, and workshops/seminars.

    QUALIFICATIONS

    Education and/or Experience                                                              

    Associate’s degree or equivalent required. Operational knowledge of all equipment used in a kitchen required. Ability to speak and write English to the extent necessary for safe and efficient performance of the job.

Associate’s degree in Food Service or Hospitality or Dietary Managers Association (DMA) program preferred. One to three years of experience preferred. Previous supervisory experience in hospital or institutional food service preferred. Working knowledge of Spanish preferred.

Computer Skills                                                          

Basic computer skills with a working (proficient or expert) knowledge of Microsoft Word and Excel applications.

Certificates, Licenses, Registrations

Illinois Department of Public Health Food Service Sanitation Certification required; City of Chicago Food Service Sanitation Certification required. Certified Dietary Manager (CDM) from Association of Nutrition and Foodservice Professionals required.
